Trout

Trout is a well-known freshwater fish and is still found sporadically in the wild in streams in the Ardennes. It is the brown trout. The trout we consume is farmed and is also called rainbow trout. Because it is farmed, the trout is available year-round. The flesh of the rainbow trout is shell-like and soft. The meat has a sweetish odor. Trout is prepared in a variety of ways; baked, grilled, steamed, smoked, barbecue or oven.
